Today is my nephew’s 2nd birthday, so I decided to try a different sort of cake for his birthday party tonight. I managed to find a template on the internet for the number “2” and figured it would be pretty easy. I made this recipe for chocolate cake and baked it in a 9” x 13” pan. This was the perfect size, as the cake rose up to about 2” thick, nice and high. I overcooked the bottom just a tad, but it turned out to be a blessing in disguise, as the cake was easier to cut into the required pieces.
These photos show the template (cut from parchment paper) secured to the cake with toothpicks, then assembled in the correct formation, and finally with the parchment paper removed. For the base, I used an overturned cookie sheet (make sure it lays flat when turned over) covered with tin foil.
For the frosting, I used this recipe for buttercream icing. The only modification was that I used 3 tablespoons of cream instead of 4 as it is a hot day and I don’t want the whole thing to melt. The icing had a perfect consistency for spreading – not too firm but not too runny. I think the secret may have been not letting the butter get too soft – the recipe said it should be like ice cream (I had always thought it should be softer than that). Now I am off to find some decorations for the top.
The final product! I think Kienan was pretty happy with it – especially the icing, which he dug right into.
